Modified 4-ingredient "paleo" chocolate mousse

I have been using this recipe for a while:

It uses 4 ounces of “paleo” chocolate. I’ll be honest – I don’t think there is a “paleo” chocolate, unless you want to try chocolate the way the Aztecs drank it.

Instead, I’ve been using Ghirardelli 70% baking chocolate. I also add:

  • A pinch of salt
  • 3 Tablespoons Allulose
  • 1/4 Tsp vanilla
  • 1 Tsp MCT oil

When I tried the original recipe, it was pretty hard, so the MCT oil makes it a bit smoother. The allulose seems like a lot, but – to me – it’s still not that sweet after adding.

I put this into 6 4-ounce containers, and JUST the 70% chocolate yields 8 grams carbs per container. (Note: you also add cacao powder, which adds carbs.) At some point, I thought I calculated about 15 grams per container, but I could be wrong.

I have yet to try this with 100% chocolate, but it’s on my list of things to do.

It sounds delicious! It would still be keto if you folded whipped cream or whipped egg white into the mixture (after the food processor step and before spooning it into glasses), for a softer lighter mousse or stripes of light and dark.

That is a great idea! I sometimes put whipped cream on it, which I’ll do tonight. My wife had me buy her a whip cream maker, like this one:

I use this sometimes to make whip cream to put onto things.

Your idea is a better one, though, as it would lighten the dessert.

Well, with this version, I forgot to add the 2 Tbsp of cacao powder. I realized it after these were already in cups. Both my wife and I thought it had a much creamier texture. Not as chocolatey though.

That makes sense. Cocoa powder is “drying”

I can’t figure out which one is better, though I like a slightly drier and more chocolatey version, I think. I’d have to have both of them in front of me to test.

I’m not sure why we have so many 4 ounce glasses with tops, but we have a ton of them.
