Meatloaf

So I am very experimental with Keto food trying all kinds of new things. Someone on Facebook mentioned making burgers with crushed pork rinds and we got to “hey I wonder what meatloaf would be like”. So I made meatloaf this morning for fun.

I had found a recipe for meatloaf and just changed out some ingredients.
1 pound of hamburger
1 chopped onion
1 bag of crushed pork rinds (instead of bread crumbs)
1 cup heavy whipping cream (instead of milk)
salt/pepper/garlic powder
1 egg
poured on Ken Davis classic 2 carb BBQ sauce on top (instead of some brown sugar mix)
baked at 350 degree’s for 50/60 minutes

The bread crumbs were traditionally used as an extended (i.e. make meat go farther) and so you don’t even need them or the pork rinds. The egg serves as the binder.
