Meatballs, Italian style

Mix one pound ground beef with one raw egg and 1/2 cup pork rind crumbs. Add 2 teaspoons dried oregano and 2 teaspoons dried basil. 1/8th teaspoon onion powder and 1/8th teaspoon garlic powder. Salt and pepper to taste.
Roll into balls and fry on medium low heat, turning frequently until cooked through.
I eat these with a few tablespoons of low carb tomato sauce. In the Minneapolis area, there is a brand called Buon Giorno (www.summitfoodsusa.com/buongiornoproducts.php ) $4 at my local grocer CUB Foods, $2.50 on sale. Only 4 net grams carbohydrate per 1/2 cup. The marinara is my favorite. They have 4 flavors.

Hey…I see 9 meatballs in the pan, and Floyd gets 4. So, Brenda…that means you get 5…seems fair, YOU made the meatballs, not Floyd!!

Do the pork rinds “add” anything flavor wise? Hubs loves them, I loathe them… are they just the binder(?) @Brenda

Yes. Binder only. You cannot taste them.
