I made marshmallow today and it turned out unbelievably well, they are an excellent alternative for the days I don’t feel like preparing a meat source.
The recipe
Ingredients
3 tablespoons of beef gelatin powder
1 cup of water
1/2 cup of sweetener (I used a stevia/erythritol blend but I don’t think it matters)
1 tsp of stevia vanilla flavour
Method
Pour 1/2 a cup of water into a bowl, sprinkle 3 tablespoons of beef gelatin powder over the water and allow to bloom for 10-15 minutes.
Pour the remaining 1/2 a cup of water into a saucepan and add 1/2 a cup of sweetener and bring to a boil stirring all the while to ensure the sweetener has dissolved.
Once the gelatin has bloomed start bleeding the gelatin mixture in a cake mixer or whatever you have at hand and slowly add the water/sugar emulsion into the gelatin.
It will take up to 10 or 15 minutes for the mixture to create the gooey texture, so hang in there. at the 8 minute mark add the vanilla flavour.
Once you are happy with the consistency, quickly scoop it out into a lined pan and smooth out with a spatula. It sets quite fast so you want to be speedy during this step, don’t try to scoop out every bit of marshmallow from the bowl you can enjoy what remains as a reward.
Leave in the fridge for 2 hours or until set.
