There was a (fairly) inexpensive package of smoked Pacific salmon I bought at Trader Joe’s so I decided to turn it into “sushi”. Here’s the recipe and I’ll post photos later:
Ingredients:
1 pkg of thinly sliced smoked salmon
Whipped cream cheese (I made my own homemade coconut cream cheese)
Thin slices of avocado
1 scallion sliced lengthwise in thin slices
Trader Joe’s Everything but the Bagel seasoning blend (or make your own of sesame and poppy seeds, garlic and onion granules)
(Amounts are relative depending on how big your package of smoked salmon is)
If you have a sushi rolling mat that helps, but you can do it with a clean kitchen towel.
Directions:
Lay a sheet of plastic wrap or bakers parchment over your rolling mat or towel.
Lay out the salmon in a single layer–in a rectangular shape.
Spread cream cheese over the salmon (whipped cream cheese is easier to spread, or let block cream cheese come to room temperature)
Lay a line of avocado about 1" from the end of the rectangle closest to you.
Lay some sliced green onion on top.
Roll into a tight sushi roll. Watch YouTube videos to learn how to roll sushi.
Sprinkle the roll with the Everything seasoning (Caution: Smoked salmon is salty and so is the Everything But the Bagel Seasoning!)
Wrap your roll in plastic wrap or parchment paper and refrigerate for about 30 minutes before slicing.
I will post a picture a little later. They came out great, and are delicious!
I eat mine “as is” but we have a tube of wasabi paste in the fridge if you want to spice them up.
