- Give these a good mix and sift to breakdown any lump:
- Ground almond 45g
- Coconut powder 22g
- Cacao powder 10g
- Ground cinnamon 2g
- Pinch of salt
- Baking powder 1tsp
- Bicarbonate 1tsp
- Mix these one at a time with your choice of mixer:
- Egg yolks 2 large mixed to pale and fluffy
- Yogurt full fat 100g
- Single cream 50g
- Tahini 50g
- Vanilla 1/2tsp
- Coconut oil melted 20g
- Beat the egg whites to stif peaks but not dry
- Add only a quarter of the dry mix to the wet mix each time and fold it nicely before adding next quarter of dry mix. Aim for a not runny thick mix but not clotted lump. Don’t be tempted to pour all dry mix in once as you might get a dry lumpy mix that is good.
- Mix 1/3 or less of egg whites to loosen up the mix.
- Fold the rest of the egg whites (1/3at a time) to the mix and fold it gently.
- Spoon it to any baking dish or parchment to bake but keep a centimetre or less so have inside cooked.
- Preheated oven to 180 C degree and bake them for 15 minutes.
