Low Carb Bacon Cheeseburger Casserole

I finally got around to making this recipe last night, and oh, my. It was so good, I ended up having seconds even though I didn’t need it. The two changes I made were, I used ground bison instead of beef, and I added 1/4 cup diced pepperoncinis with the pickles. Next time I’ll make it 1/2 cup. This recipe is well suited for batch cooking and freezing. I’ve made a few of Dot’s recipes, and so far, they are quite yummy.
