George Stella is my ‘go to’ for Cauliflower recipes. They are ‘no fail’. I do cheat by using a large bag of steamed cauliflower that I cook in the microwave as a shortcut. Hope this helps; http://www.foodnetwork.com/recipes/mock-garlic-mashed-potatoes-recipe.html

If not for cauliflower in a bag, I’d probably never eat cauliflower mash. I love it, but its a lot of work unless you do it this way. Also, unless I’m getting it in a CSA box, its more cost efficient to buy frozen.

Steam the cauliflower then I add a handful of grated mature cheddar, a small knob of butter, 1 tsp of mustard and a small splash of double (heavy) cream or creme fraiche - blend with a hand blender and season accordingly. I prefer English or Dijon mustard.

Try roasting instead of steaming to lock in the flavor.
