My wife found a recipe for lemon rolls and challenged me to ketofy it. Challenge accepted and the results were amazing.
Disclaimer for the OCDers, I make things to taste, so my recipe is more of a guideline.
Roll:
Take your basic fathead dough, add a 1/4 cup coconut flour and 4 tbsps. melted butter. (Coconut flour helps with the extra moisture of the butter, next time I may add an extra 1/4cup and/or add 1/2 tsp of guar gum, but too much coconut flour and the dough may not stay flexible enough)
Sweeten with Erythritol and add lemon extract until sufficiently lemony( I used quite a bit) May add lemon zest next time.
Filing:
5 tbps butter, softened
Sugar free lemon gelatin (just the powder) or plain gelatin and lemon extract to taste
Erythritol until sweet enough
Glaze:
8 oz cream cheese
lemon extract
1/2 teaspoon vanilla extract
Erythrtol to taste
Assembly:
Roll out dough into rectangular shape about 1/4 inch thick. Spread filling over dough. Roll into tube. Cut into 1/2-3/4 inch rolls. Place into pan just large enough for all the rolls to be just barely touching. Cook at 350 for about 20-40 minutes or until browned. Let cool down a little and spread the glaze on top. Best eaten warm.
I probably used about 1 1/2 - 2 cups Erythritol and as much as half a bottle of lemon extract.
