Lemon Raspberry gummies

So, since we have been on the autoimmune protocol, I kept seeing food porn pictures of gummies. The paleo AIP world likes gummies because they contain gelatin which of course is essentially collagen, good for connective tissues, skin, and the gut. I confess to being a gummy bear addict in my past life so not surprising that I decided that I NEEDED some gummies.

Since we have been talking about glycine being sweet, I did a little research and found that sometimes it is used as a sweetener. I am not going to get carried away using glycine as a sweetener, but in this recipe, it seemed like a natural fit. So here’s an AIP recipe adapted to keto:

3/4 c lime juice
1 c pureed raspberries
1 tbsp. glycine
1/4 cup gelatin (I used grass fed)

Heat the lime juice in a small pan and dissolve the gelatin into the liquid by whisking for several minutes. Combine the other ingredients after the liquid has cooled a little (I did this as to not “cook” the raspberries). Pour the mixture into a baking dish (I used 9 x 9) and chill in the refrigerator until mixture is firm.

They are quite tart with a hint of sweetness. I’ve also seen a lot of similar recipes with coconut milk. I think a combination of that with lime would also be very nice! That’ll be my next test.

Ha! So I tried it last night and I loved it. The gummies are smooth and creamy. The coconut milk has a bit of natural sweetness. But no lime on this one, that’ll be next. Here’s the recipe:

1 can unsweetened full fat coconut milk
1 tsp vanilla
1/4 cup grass fed gelatin
1 tbsp. glycine

I used olive oil in the pan to keep the gummies from sticking. If I was a bit more ambitious, I’d invest in some fun silicone molds.

Where do you get the glycine & grass-fed gelatin?

I ordered both on Amazon. The glycine is something @Richard talked about using to supplement with to build collagen for his dental implant. It’s slightly sweet and I think combined with the beef gelatin is a good collagen building combo. Because it’s a supplement, I’m not going to go hog wild using it in recipes but here it seems to make sense.

The other side benefit of the glycine is that it is supposed to help with sleep. I’ve been sleeping so well but I can’t say for sure it’s glycine because there are several other factors including the fact that my husband no longer snores on this AIP woe along with the differences between keto (which I was for a year) and keto AIP for the last 30 days. Edit, my husband not only snored, he was just diagnosed with sleep apnea, and it appears to be gone with the weight loss and diet change.

I’m going to make this with agar-agar instead of gelatin… my wife might like it!

This is a fabulous recipe. The kids love it. I am going to try it with different combinations of fruit and flavours. I thought I lost the recipe … a lot more flavour then the jello based gummies. I didn’t use sweetener in my first batch. The tartness was refreshing.

Do these have to stay refrigerated?

Yes, I’ve keep them refrigerated. But I have carried some with me for periods of 3 hours + without an issue.
