Total newbie on keto (and on the site too) but I thought I’d share THE keto treat I have been making since I started keto a month ago. And can I just add, this is the ONLY keto treat I have had all month! Just that good =)
I like to keep things simple, so here you go - (you can obviously adjust based on how many bars you want)
- [ ] add 100 grams of coconut oil and 50 grams of coconut butter in a microwave-safe container, best with a pouring spout; melt by nuking it for 10-20 seconds
- [ ] add in 1T of cocoa powder, roughly 5 grams, stir and mix well; it should be runny but a bit gritty
- [ ] portion into 14 bars by pouring mixture into an ice tray; [optional, add in two peanut halves into each; sprinkle sea salt on top]
- [ ] freeze for minimum 15 mins; pop them out like you do with ice cubes and store in a container in the freezer to keep fresh and solid. I have not tried leaving them in room temp for long, so I don’t know how long they will stay as “bar”, which makes this a home treat - have not thought of a way to bring this on the road yet…
I am very excited to have them this time with the peanuts in them. I know they are not good in large amount, but if I don’t put them in here (in moderation), I know I will end up eating those little suckers in a less graceful fashion!
