Layered bacon-ends-&-bits & veggie bake

Deeelishus, baconny marvel!

Ingredients: bacon ends & bits, garlic, onions, riced cauliflower, mushrooms, liquid oil, vinegar, salt, pepper, brocolli florets

My oven is weird so I’m not posting exact times, mine took about 45 min. All of my measurements were done visually.

  1. Baking pan; lay out bacon ends and bits (3 lbs / $5)
  2. Light broil until crispy, fat rendered
  3. Add crushed garlic and onions
  4. Cover with riced cauliflower
  5. Spread around chopped mushrooms
  6. Spread around more raw bacon ends and bits
  7. Mix dressing: 0.25-0.5 cup of liquid fat, 4 TBSP vinegar, salt and pepper
  8. Spread out broccoli florets (leaves down), and spoon dressing on each floret, and remaining all around
  9. Bake (350-400) until broccoli is a bit singed and bacon looks cooked, then lightly broil for a few minutes to crisp the bacon – careful not to burn broccoli.

I am attempting to remove cheese from my keto diet as I believe I may have an intolerance to it. Sigh. This recipe looks great!

I am also intolerant to lactose and have found lacto-free Cheddar, made by Arla. It is amazing! Try it! Couldn’t Keto without it! :rofl::rofl:
