Last nights dinner

I made a chicken casserole last night and I followed the following recipe. .

  • 700 g boneless chicken thighs or chicken breasts
  • 30 g butter, for frying
  • 75 g green pesto
  • 300 ml heavy whipping cream
  • 150 g feta cheese, diced
  • 1 garlic clove, finely chopped
  • salt and pepper

Served with Broccoli and Cauliflower…

Amazing!!

Woohoo for yummy dinner! I created a bacon stuffed, Parmesan crusted chicken thighs and fresh asparagus pan fried in butter, salt and garlic, then covered in Parmesan/paprika. It was mega tasty and I’m having leftovers tonight!

I ended up with a big bowl of leftover roasted brocolli, topped with a big hunk of excellent feta cheese drizzled in olive oil and sprinkled with red pepper flakes.
Simple meal, but so satisfying! I just wasn’t in the mood for fancy. I’ll do salmon tonight though! Still not fancy per se, but so delicious.
