My granddad was pure Native Hawaiian and a merchant seaman. He’d come home after a few months out to sea to my Scottish-Irish American grandma with recipes and she’d do her best with them. So, while my family recipes are sometimes a strange take on an authentic dish, they are always delicious! Here is one of our adobo recipes, which tastes like a combination of Filipino adobo and Portuguese vina dosh. You can make it with country ribs or pork butt, which will give you less fat, more protein- or with pork belly, which gives you TONS of fat and moderate protein. Forgive the directions calling to put it on top of rice. Just ignore that part. I do now!
