Kidd's Low Carb Carrot Cake

Kidd Low Carb Carrot Cake
5 eggs
1 1/2 sticks butter (melted)
2 tsp vanilla
4 tblsp swerve (powdered)
2 tblsp Sukrin golden (optional)
mix well and add
2 cups shredded carrots (3 large carrots)
3/4 cup crushed walnuts
Set to side
In another bowl mix
1 1/2 cups almond flour
2 tsp cinnamon
2 tsp allspice
1 tsp ground ginger
2 tsp baking powder
1/2 cup unsweetened coconut (optional)
stir well
Pour wet ingredients into the dry hand whip for a couple minutes
Pour into a 9 inch pan
Bake at 350 for 40 to 50 minutes.

Frosting
1 block cream cheese softened
1 stick of butter softened
2 tsp vanilla
6 tblsp swerve (powdered)
This icing is a very large amount because my husband like a little cake with his icing.

I would guess around 4 carbs per piece,Of course depending on how big the piece is lol.

I plugged it all into Cronometer and here’s what I got (I used Sukrin Melis instead of Swerve, should be the same outcome). I figured 9 servings, because I would bake it in an 8x8 square which is easy to cut into 9.

Cake:
395.4 kcal
37 g fat (84%)
9.6 g protein (10%)
5.4 net carb (6%)

Icing (full recipe):
181.4 kcal
18.9 g fat (94%)
1.66 g protein (3.6%)
1 g net carb (2.4%)

Cake with icing (1/9 entire recipe):
576.8 kcal
55.9 g fat (87%)
11.26 g protein (8%)
6.4 g net carb (5%)

Definitely a splurge for me, but looks worth it. I may have to bake & freeze cake pieces, then make a little icing at a time, so I won’t binge 1/2 cake (or more) in a day. I know my limits! :crazy_face:

Yum! Carrot cake is my favorite! I may have to make this into cupcakes for my next birthday!
I haven’t made any sweet desserts so far in my 2 months of keto and am not in a hurry to do so.

Too bad there’s no keto substitute for pineapple. In my former glucose-burner life, I made a killer carrot cake that included a small can of crushed pineapple. I suppose I could find some kind of flavoring - has anyone found a substitute?

The olive nation pineapple extract is highly rated - and they say no added sugars…short ingredients list - you could e-mail them to see if they could give you a nutritional breakdown. (haven’t used it myself though).

I tried making a carrot cake and it turned out gross. I’m kind of afraid to try again. Cheesecakes seem to be my specialty.

It was my husband’s 50th birthday and carrot cake is his favorite. It is a splurge for me too. It was worth it as I am proud of him for staying on plan for almost 2 years.

That looks so good. Carrot cake was one of my favorites. I may just have to give it a go perhaps for my birthday or Thanksgiving.

It was good Thank you. I think it needs at least 3/4 of the icing. I made it with half and it was not quite enough

chopped Choyote squash cooked with sweetener and pineapple extract in a bit of water until pineapple texture.
Richard Morris does this to make “pineapple” bits for his Hawaiian pizza.
@richard is that your basic method?

I baked one tonight. 50 net grams carbohydrate per cake, about 6 grams carbohydrate each piece when cut into 8 pieces.
Better than sugar carrot cake which is 320 grams of carbohydrate per cake!

This should be pretty much like a normal carrot cake - certainly the type I used to make anyway. I used to make one nice and heavy on the spice and nuts and the recipe was very similar except I used wholewheat flour and bran instead of the almond flour and brown sugar instead of sweetener. So I bet this tastes great.
