Keto White Barbeuce Sauce

I joined the forums a couple of weeks ago, but this is my first post. I took off for the eclipse and missed reading for a week, but have been catching up. I’ve been Keto for a couple of years, but only found the Dudes a couple of months ago. Been enjoying their shows and catching up on old episodes.

Anyway, while I watch my protein (like, I’m sure, the vast majority of you), I prefer it out of my smoker. I’m a barbecue guy - not grilling over coals, low temperature, slow smoking. I thought I’d post a recipe I put together a few months ago. It started out as a Pinterest recipe for Alabama White Sauce (there are several), but I experimented a bit and like this better than others I’ve tried. Giving up a tomato-based barbecue sauce was a rough thing, and the vinegar based sauces I’ve seen use way too much sugar. I don’t have problems with sugar alcohols, but my wife does, so I try to make things that are safe for both of us.

Mayonnaise - 1 cup (we make our own, and for this you should use something like mild olive oil, so that it doesn’t have a strong taste of its own. If you’re not avoiding high-omega 6 oils, use whatever real mayonnaise you like.)
Apple cider vinegar - 1/4 cup.
1 tsp onion powder
1 tsp garlic powder
2 tsp horseradish (ground prepared)

That’s it. Mix it and blend it well until smooth. No cooking, no heating. Like most sauces, the spices blend better as it sits, so you can make it a few hours in advance. The 4:1 ratio of mayonnaise to vinegar is kind of arbitrary; 3:1 works but gives a runnier, more vinegar-y taste

I love Alabama White Sauce on chicken. I’ll give this a try next time I smoke some chicken.

I had my first white barbecue sauce recently at Jim "n Nicks. Theirs had A LOT of black pepper. Can’t wait to try this recipe.

I had some in Georgia that was pretty bland (Woodstack in Valdosta). This has a bit of kick from the horseradish and the apple cider vinegar. Of course, you could add pepper to taste.
