Keto whipped cream

Happy Valentine’s Day!

A quick recipe for keto whipped cream… it’s perfect on a few strawberries or whatever…

8 ounces heavy whipping cream
. 5 tsp vanilla extract
1 to 2 tbs swerve or sweetener of choice

Throw it into your stand mixer and whip it up… or use a hand mixer…

Suggestion… add the sweet in slowly… I find I need less and less of it…

But I like to whip my hollandaise sauce as well.

If you’re really into going full tilt, 500g HWC, .5g Xantham, 25g splenda or swerve.
You don’t really need the vanilla. It’s nice, but with good cream, the fior di latte flavor is really nice. Adding some actual vanilla to it instead of extract would take it over the moon. Using an essential oil would go someplace interesting.

If you have the siphon, gotta make it earn it’s keep. :wink:

You make the hollandaise (Sous Vide better for this), and then whip it with the siphon. Have to have a hot/cold rated siphon for this. Lot of kooky siphon tricks.

I don’t know if my skills are to that level yet, but I might have to get one of those siphons, because that sounds AWESOME. I didn’t realize I could sous vide the sauce, I need to try that. I LOVE hollandaise, but I never make it because I’ve never been able to do it correctly on the stove top.

With Sous Vide, you don’t have to whip it, but it’s lighter. But it comes out perfect every time.

If you have the Sous Vide rig, you can make it great without the siphon. Maybe do that, then get the siphon.

I do. My wife thinks I’ve reached some kind of higher level in the Keto cult because I’ve been using it so much.

Regular whipped cream from a can is fine for keto.

The one they sell at Costco (in a 3 pack) tastes amazing.

I was in charge of dessert for a small party tonight so I picked up a Japanese cheesecake and blueberries and figured I’d make whipped cream to go with it, and I would just have the berries and cream. Used cream, stevia, vanilla, cinnamon and cocoa… And whipped it till it broke. Oops.

Added a little plain yogurt and kept whipping till we had a nice spreadable buttery frosting instead.

It was a hit!

Scratch that, I got sick of it. I’ll take the regular one from the grocery store (not the “extra creamy” garbage).

I really liked that stuff for a couple months and then I guess I got tired of it and wanted the “basic” whipped cream, which is much better (at least that’s my opinion for now, lol)

Just saw a keto self promoter on IG crapping on about how she was going to smash a whole can of cheese there and then, and screw the “keto police”. Yeah, what a badass, you show them!

Food culture is clearly very VERY different when comparing here with the US, but I still roll my eyes at that sort of thing.
