Keto Shakshuka

Great for breakfast but this evening had with broccolini.

Ingredients
4 tbsp flavour free coconut oil (to cook with)
0.5 med brown onion
1 jalapeno pepper
1 clove garlic
2.5 gm cumin seeds
2.5 gm paprika
0.5 tsp ground black pepper
0.5 tsp Himalayan pink salt
2 medium tomatoes diced
4 eggs
50 gm feta cheese
15ml liquid coconut oil (to drizzle over at end)

Serves 2.
Carbs 8.8 gm
Fats 50.3 gm
Protein 16.5 gm

Method
Melt coconut oil in pan
Saute onion till clear
Add jalapeno and cook for 1-2 mins
Add cumin, garlic, paprika and pepper and cook till fragrant
Chop tomatoes and add, simmer allowing them to break down a little

.Make 4 indentations in the mixture and crack an egg into each indentation.
Spread the egg white a little or put some of the liquid over the edges of the white

Place a lid on pan, and allow to simmer on low heat till the eggs are to your liking

Plate up with some feta crumbled over the top and drizzle with liquid coconut oil.
