Can we start a thread for recipes for fat-based sauces?

One of the main challenges with Keto, is that many cuts of meat don’t have much fat, yet they are essential for variety and nutrition - e.g. Fish, Chicken (even dark), etc. This is not Keto, it’s kidney disease.

The solution is to add butter, cream cheese, cheese, HWC, etc for satiety - you’ll simply, naturally eat less protein. Go to a good French restaurant and many dishes will be served in a superb sauce. Let’s collate high fat sauce recipes which can be added to steak, chicken, fish, you name it.

I’ll start with some basics (please improve if you have a tastier variation):

Hollandaise sauce

Béarnaise Sauce

Nacho Cheese Sauce

I’m not so fancy.

I keep herbed butter in the freezer.
Chopped up herbs, garlic, lemon zest, S/P with either butter or ghee.
Portion in ice cube trays or candy molds.
Freezer, pop out & freeze in containers/zip top bags.

Btw, for the cheese sauce make sure to use a cheese that melts well.

These didn’t work out - string cheese, queso fresco
These do - cheese slices (used cheddar, pepperjack), grated block cheese, shredded cheese

A double broiler and whisk work really well, you don’t need an immersion blender. Make sure to add the cheese in small increments & incorporate before adding more (e.g. 1 slice at a time works)
