Keto popcorn shrimp

Alright, this is a simple recipe, I made a very large batch, you can scale it back if you choose

1 package softened cream cheese
10 eggs
1/4C almond flour
5oz bag of pork rinds

Crush the pork rinds in a food processor and set them side.

Combine cream cheese and eggs, I use a ninja and it quickly becomes a thin batter consistency.

You can add in the almond flour and wiz again. I then pour this over the pork rind dust and mix well.

Now you can probably sub out the pork rinds for more almond flour I might try that next… I just dredged the shrimp through and dropped them into the hot lard one at a time… they are really good!

When I was done I had left over batter and I spooned in the batter by itsself into the hot grease and they turned out like hush puppies… very good

What kind of shrimp did you use & how much shrimp? I get that this is a seat-of-the-pants recipe but some guidance appreciated.

i just got a bag of small frozen de-veined, shelless, no tail raw shrimp from Walmart, was either 12 or 16oz… just thawed them out, used a paper towel to get rid of excess moisture and dipped and fried…

I tried this as a “corn” dog breading and it pretty much was a giant mess. But I also didn’t have enough pork rinds. I did add a bit more almond flour though. I also added some salt and pepper to the batter. It was ok, not sure it was worth the mess for me to make again though.

Mine was thick, I was wondering if corndog would work… if I try it, ill share it here for sure!

I bought some already cooked, frozen shrimp this weekend. Would those work for this recipe. Would LOVE to have fried shrimp!!! <3

I feel a pork rind weekend coming up. Pork Rind Pancakes for breakfast and pork rind shrimp for dinner! lol

Yeah, it doesn’t take long to fry these up, they brown quickly!
