Keto Passover Matzo Brie - not kosher!

For those of you celebrating Passover, but not keeping kosher. You can make a dandy matzo brie by substituting pork rinds for the matzo. You can’t tell.

Soak pork rinds in warm water till fairly soft, 3-5 min (4-5 rinds per egg). Squeeze rinds till damp-dry and chop up with a knife till no larger than 1" pieces.

Add to beaten eggs with salt, pepper & nutmeg. Batter should be loose. Fry up some finely diced shallot or onion, 1 T per egg, in avocado oil. Add more oil and the egg/ rind mixture. Fry 5 min or till partly set, give a few stirs & flip over, chop into bite-size pieces. Add more oil if you like it crispy.

If you like your matzo brie on the sweet side like some folks do, leave out the pepper and put some SF syrup over it like pancakes. Kind of like @Brenda’s pork rind pancakes but more eggy.

I don’t suppose they sell Passover pork rinds! good luck finding a rabbi to bless that. But at least it doesn’t have leavening in it.

Ahh yes. I remember frying up eggs with softened matzo crackers. Really good.
I love pork rinds substituted in just about anything so no doubt I’d love this as well.

Now. Someone please ketofy hamentaschen. Perhaps fathead dough and SF jam?
