Keto lasagna

Another recipe from KetoFocus on Instagram.
Making lasagna and instead of pasta sheets using chicken loaf slices.
Sounds intriguing and I wondered how it would work. But it was awesome. Even my non-keto partner ate it and said it was like eating pasta texture/taste wise.
I made my pasta sauce with mince the usual way and low carb. Instead of white sauce I just used ricotta for that layer as I was lazy. Then the chicken loaf slices as the pasta layer. The top layer I put a little bit of pasta sauce on top to cover the chicken loaf, some ricotta and grated cheese. In the oven until brown on top. Win!

Ooooh it’s deli chicken. Like ham. Processed chicken that you get in the deli section of the store and they slice it think. Chicken loaf is an Aussie thing :):smile:

Heh, nope, we have chicken loaf over here too. (pretty sure they also have it in the US).

There were different types of chicken loaf though - in terms of consistency. One was more “chunky” - like ham and bacon loaf, if you can find that. The other one was a finer grind, like bologna.

Ah! It’s “flaked and formed”. Yeah, that is how most of our poultry deli meat is made we just pretend it isnt so they shape the “loaf” into a vague bird-type shape. I have seen ham definitely shaped into a loaf, though. Here’s a typical deli chicken shape.

Heh…a friend of mine refers to hot dogs, bologna and similar “mystery meat” as “snouts, tails and testicles” :slight_smile: Sometimes he’ll throw “rodent excrement” in there. :wink:

It’s a little-known item that sometimes mice fall into the processing equipment in some plants. Maybe it’s an urban legend. I think most of these often have some basis in truth. By the time that everything is processed into this sanitized “slurry”, I doubt it would matter what the sources are.

Wow 2 Keto Dudes were right about the hardcore peeps that have to comment on everything. I just posted the lasagna which was a great keto meal. If you don’t want to make it then no worries. Move on

This is a great idea to make lasagna, and sounds so much easier than dealing with noodly noodles. I’ll look for something that resembles chicken loaf. Although I keep imaging spam, but I won’t use that.

Emoticons (smiley’s) are usually a pretty good indication that people are being light-hearted about something. :smiley:

That’s pretty much why I use them so much - it’s from back in the IRC days - wee hours in the morning chatting with people from around the world. If you didn’t use them, a lot of the sarcasm can quickly get misinterpreted. :slight_smile:

On another thread, recently, there was a discussion on using this kind of chicken to substitute for corn tortillas in creating enchiladas. I tried it and found it good. As with this lasagna recipe, the bland flavor of the chicken was covered up by the sauce and its texture actually similar to flour tortillas (not corn).

Yes I posted that enchiladas recipe which was another KetoFocus one. Worked amazing which is why I thought I’d try the lasagne which was just as great.

Never would of thought of that substitute ever :smiley:
