Keto Gnocchi

It’s so good! Pillowy little morsels of deliciousness! Served with my low-carb bolognese sauce. Delish!

Sure thing Jacquie. MyFitnessPal calculates this out to be 5g Carbs (net) for 5 servings.

Splash EVOO
1 tsp, Minced Garlic, raw
1.5 tsp, Chicken Stock powder
1 Medium Zucchini (courgette)
500 g Beef Mince
0.50 container (750 gs ea.), Tomato Puree (no added sugar)
Paprika, Italian herbs, Pepper

Heat a pan and add EVOO and minced garlic, stirfry 30 seconds.
Add minced beef and stir/break up with a spatula, cooking until browned - all the liquid should be gone from the pan.
Add half a bottle of tomato puree (I like Italian Tomato Sugo, but as long as the ingredients are tomatoes, and maybe salt, you’re going to be OK - if you like it chunky you could substitute diced tinned tomatoes, about 3/4 tin).
Add spices and stock powder: 1.5 tsp chicken stock powder. 1 tsp paprika, 1.5 tsp Italian herbs, a few grinds of cracked pepper. Stir and taste, adjust seasoning if desired. Put the lid on and bring to a simmer, it will probably splash as it boils.
Grate zucchini on a coarse setting and add to the sauce, stir in and let cook for at least 20 minutes, covered. Check the liquid level periodically and add more water if it’s looking dry, about 1/4 cup at a time.
Enjoy over zoodles, or shiritaki/konjac noodles.Very good smothered in grated cheddar or jack cheese.

This is just modified from my “pre-keto” bolognese sauce (which had more tomato puree and also grated carrot. Cutting those out halved the carb count!). Hope you enjoy!
