Keto Flourless Chewy Double Chocolate Chip Cookies

I know there is a few recipes for chocolate chip cookies, but this recipe isn’t quite the same as the others, and didn’t want to hijack someone else’s topic.

Anyhow, finally managed to win over my better halt to this WOE (side note - she is a doctor, general practiotioner, if you know where this is heading…) So after much back and forth, we are on the right direction, and at a point where she keeps sending me links to recipes! :grinning:

And this was one of them:
Keto Flourless Chewy Double Chocolate Chip Cookies

A few notes - the first try i used the sweetener as per recipe, and also couldn’t find unsweetened chocolate chips, and the cookies came out too sweet. The second attempt i only used 1/3 of the sweetener, and chopped up 90% dark chocolate to use instead of ready-made chips.

We still haven’t tasted them - waiting for them to cool a bit, but they look great and smell even better.

Yours are much prettier than mine. Mine came out much more rough and ragged looking. But I don’t care. :slight_smile:

They’re cooling right now. Will have to give 'em a try in a bit. :smiley: Will be back later to let ya know how they tasted…

I used just a tad bit more sweetener than I thought I should and they turned out just a little less sweet than I thought they might be. Still, very good.

Still getting the hang of baking with erythritol. The batter always seems sweeter than what the final product will be.

This recipe is a keeper!

So the verdict is out and … OMFG!!
They were delicious!! Sweetness spot on, the middle was nice and soft. Wife aproved as well :grinning:

Re: erithritol in recipes, not sure if it depends on the label, i only started to bake with it recently (used stevia before), and certainly going forward i use much less for start, maybe 1/3-1/2 of what the recipe says. And than see how it goes.
