Keto falafel -- in progress

I was meeting up with a old friend who is a long time vegetarian and wondered what could we cook together. thus began my search for keto falafel. If you search on the internets there are many, many recipes. Here is what worked for me today:

I started with this person’s recipe:

I wasn’t sure why it called for flax seed/water instead of an egg…seemed a bit odd to me. Also garlic does not love me so I frequently don’t bother to cook with it.
The truth is I am almost incapable of following someone else’s recipe as written. :crazy_face:

So this is what went into my food processor:
cilantro leaves,
parsley leaves,
salt,
cumin,
2 green onions,
1/2 c ground hemp seeds (why are they called hearts?),
egg
1 t baking soda

I turned on my processor and when I turned back it was more of a paste.
Perhaps next time I will pulse and pay more attention?
Or perhaps it was the egg?
Worried it was too liquid-y I stirred in a tsp of konjac powder.

In my frying pan I was cooking some lamb sausage, I added some avocado oil to the pan and got it hot. (my vegetarian friend was not sharing this meal, lol)
And I fried up 6 good size patties, I did not try for the ball shape

I served them with the lamb sausage and some lazy tahini sauce.

They were awesome! Totally hit the spot and I think they will for you if you used to love falafel.

Knowing me I will be tweaking this recipe the next time for sure. Maybe I will even remember to take pictures. It could happen
