Keto Cupcakes (plain)

This recipe makes 12 cupcakes
Ingredients:
4 Tbs softened butter
1/3 C sugar free sweetner (I use a mix of xylitol & a couple pinches of stevia)
4 eggs
1 tsp vanilla
1/4 C sour cream
1 C almond flour
1/4 C coconut flour
1 tsp baking powder
1/4 tsp salt
Preheat oven 350*
In bowl w/electric mixer cream the butter & sweetner until light & fluffy.
Add sour cream & vanilla, beat to combine.
Add eggs & mix well.
Blend in the flours, baking powder & salt until combined.
Divide batter into muffin cups.
Bake 25-30 minutes (watch them the last 5 minutes closely). Let cool. Enjoy plain or with a topping!
Ps. You can switch the sour cream out for cream cheese if you like.
