Keto Cupcakes

Here is my go to staple that I make every week. These are AMAZING, I had to share with you!

Keto Cupcakes (plain)
Macro & micro breakdown p/cupcake
144 calories, 11.4g fat (3.9g saturated, .5g polyunsaturated, 1.9g monounsaturated), 4.6g protein, 7.8g carbs, 7g fiber

sodium 111.4mg
potassium 31mg
sugars .4g
calcium 21.8%
iron 1.6%
vitamin A 4.8%
vitamin C .1%

This recipe makes 12 cupcakes
Ingredients:
4 Tbs softened butter
1/3 C sugar free sweetner (I use a mix of xylitol & a couple pinches of stevia)
4 eggs
1 tsp vanilla
1/4 C sour cream
1 C almond flour
1/4 C coconut flour
1 tsp baking powder
1/4 tsp salt

Preheat oven 350*
In bowl w/electric mixer cream the butter & sweetner until light & fluffy.
Add sour cream & vanilla, beat to combine.
Add eggs & mix well.
Blend in the flours, baking powder & salt until combined.
Divide batter into muffin cups.
Bake 25-30 minutes (watch them the last 5 minutes closely). Let cool. Enjoy plain or with a topping!

Ps. You can switch the sour cream out for cream cheese if you like.

Have you tried other flavors? I imagine it would be easy to make these chocolate by adding some cocoa powder.

@Vega, yes I have. I have kept everything the same and I have added 1 tsp of pumpkin pie spice or apple pie spice or just cinnamon or just spice.
I made some where I added 2 tsp lemon extract (I think these are now my favorite!) and the other day I made some chocolate orange flavored ones (3 tbs unsweetened cocoa & 2 tsp orange extract). I think next time I would add in some melted 90% cocoa bar pieces for a richer flavor. :smile:

I just found pumpkin extract! This is a game changer for my keto cupcakes, I am so excited!

I have successfully make a batch of my keto cupcakes that taste just like the pumpkin spice donut from Tim Horton’s!

Add this to the keto cupcake recipe: 1/4tsp caramel extract, 1/4tsp maple extract, 1/2tsp pumpkin extract and 1/4tsp pumpkin pie spice
