You really need to watch out for hidden sugars in the flavored pork rinds. I buy the plain ones. The ingredients listed are, “pork skins, salt” and that it. The flavored ones usually have a dozen ingredients. MSG is a type of sugar iirc. And then there is maltodextrine or maltodextrose. Usually used as an anti-caking agent. It has a higher glycemic index than table sugar, about twice as much.
Case in point: after eating a small(ish) bag of BBQ pork rinds listed as zero carb, my blood glucose spiked over 120 after 30 minutes. That was after being fasted about 20 hours or so, and nothing but water to drink.
yes, I added cheddar cheese bits to mine too and it was still good but just a little more chewy good for a taco shell!
That would be the mono-SODIUM bit, right? I should have thought that through more carefully…
Although Kale is touted as the daddy of greens as far as nutrition goes - to me it tastes like Satan’s moss, and the texture is like those cable ties you get from a hardware store.

Baby Spinach is a far safer option.

But have you prepared him the way I suggested by putting them in the oven with seasoning? Their crunchy like chips and they lose that weird leathery green taste.
I used to buy those at Trader Joe’s and just loved them. Had my first bite since going keto, and I could not believe how sweet they tasted (they did not taste sweet pre-keto.) Looked on the label and found Maltodextrin!

I’m pretty sure the kale we get here in the UK via the supermarkets is a bit different to the stuff I’ve seen in videos compared to other parts of the world. I’ve seen kale look similar to the bushy / non stem part of broccoli online, here is just comes pre cut / prepared and looks like cable ties… maybe I need to try your prep anyway
There’s also multiple varieties of kale - I saw three or four types at the market the other week.

I was just thinking about how I wanted to make some kale chips for my next movie night, as I read that they are a great replacement for popcorn. With some organic torula yeast sprinkled on (only 3 grams carbs for a tablespoon which seasons a whole bowl of something) along with the garlic powder, oh my!!!
I’ve only had homemade kale chips friends made a couple times - and they were DIVINE. I never buy the ones from the store though - way too pricey.
