“Keto” is a physiological state, it’s not a lifestyle or a diet. In order to be in ketosis, most people have to adhere to a diet that’s pretty low in carbs. If that wasn’t sustainable for you in the past, “keto” will be similar, unless you do something different than before. Diets that severely restrict a macronutrient (regardless of whether it’s carb, fat, or protein) are inherently more challenging than diet plans that don’t. But if you’re willing to put in the effort, there are many delicious HFLC recipes.
Another way of achieving a ketotic state is via fasting. Regimes vary in length and frequency, but restricting WHEN allows greater flexibility in WHAT is eaten. Some people in my family can maintain a state of ketosis by intermittent fasting and a Paleo diet that’s not particularly LC. Those of us who are less metabolically heathy need a greater degree of fasting to achieve the same results. I can eat whatever I want in a day, so long as its sandwiched in between two days of fasting.
