Seriously one of the best dinners I’ve ever made - including pre-keto!
I made the Jalapeño Cheddar Chicken recipe from Get In My Belly with some Spanish Cauliflower Rice! I don’t have an exact recipe for the rice, I just added spices until I liked it. I used olive oil, salt, pepper, onion powder, cumin, chili powder, tomato bullion and cayenne. Rice was one of my very favorite foods and one of the few I miss since cutting carbs. While this didn’t have the same exact texture of rice, I honestly didn’t miss the rice. The flavor was so good! Topped it all with a little pico de gallo and sour cream.
