Lots of Brats will have cream as an ingredient. Ratio is approx. 3 lbs. of meat to about 1/3 cup of cream. But do not use any vinegar or citrus.

Well, I added 1/4 cup of bacon fat. That did the trick. Nice and juicy! Thank you all for the help and tips! I was missing the fat.
