I made Ice Cream!

2 cups HWC
2 cups unsweetened almond milk
4 egg yolks
2 tablespoons Café al Fresco hazelnut syrup
1/4 teaspoon salt
1/4 cup sliced almonds
Teaspoon Vanilla extract

4 large servings. 5 carbs per serving

Do your thing, and then throw it in the ice cream maker. Hubby loved it!

Sounds awesome! No sugar added eh? Well I guess the hazelnut syrup has some.

Zero carb syrup

Sadly, while zero carb, it uses acesulfame potassium sweetened, which raises insulin. For man in the keto woe, this isn’t an option, but it could work for some.

Works for me lol I use the vanilla in my tea, but just a dash. Managing to keep my blood sugar below 80 this past two months

acesulfame potassium won’t raise glucose, but it can raise insulin and inhibit ketosis. So you may have issues and not know it.

Your ice cream sounds lovely. I make something similar but using the vitamix. I supercool the cream, and freeze the almond milk (homemade and kept rich) in small ice cubes, and blend it all. I use other flavorings than you (peach, or strawberry syrups for example), and sometimes sucralose powder as my sweetener. Depending on the other ingredients, I’ll add some plain ice, but not too much so the flavor wont be too dilute. I generally don’t add eggs simply for speed.

In the summer, it’s a great treat.
