GUYS! GUYS! I lost another kilo. I am just so over the moon.That makes 3 kilos in 2 months or 6.6 american pounds. It might not sound like much and the process is very slow- but its like my dream come true. I eat so much and so well. I had to celebrate this by posting about it. I am so in love with keto and this WOE- or better put: this way of LIVING.

I just love to hear when people find keto so easy and enjoyable; I really do. It makes my heart sing for them (singing for you now, my dear!). I wish everyone who suffers from obesity and food addiction could discover it and give it a try. So many dismiss it without even researching or trying.

I too am upset when I hear people struggling. Just met a friend who continues to have weight problems and tries this and that- always the yoyo. I compliment him on his weight loss, and 3 months later he has gained it all back. Now he tells me he is trying SPORTS - like this is the answer and he has to put in the hard work. I wonder how long he will last? There once was a german politician for the green party named Fischer, who began running- like marathons. He lost a TON of weight. He was almost unrecognisable. And fast forward 10 years later and he is fat again because he stopped running.
Anyway, I guess they just have to see the change in US to believe it, and 3 kilos isnt remarkable enough yet. Maybe when I have lost 10 or 15, people will ask me what I am doing to make this happen. But I am taking my time and eating well and not suffering and so its slow. Thats OK.

I got it off youtube and I am not really sure if it is the best or if I can even find it again- there are quite a few. It used garlic powder and I missed the onion. I think next time I am going to try the one with bacon. Just go to youtube and put in āketo mac and cheese.ā I am really growing to LOVE cauliflower because you can do so many yummy things with it.

I forgot all about dip. Now I have to google some keto dipsā¦with celery and red bell peppers etc. Sometimes I had this with blue cheese- but DIP? Gotta check YouTube for keto dips prontoā¦

So I think I found the best mac and cheese recipe.
Fry chopped onion, bacon in a little butter. Onions should not be brown but just glassy. Add cauliflower and dont cook too much but just brown a little. Put this mixture in the casserole. Take the same pan and add about 50g of butter to melt easily but not too hot. Then add: garlic powder, cayenne pepper, fresh estragon or thyme ( I had estragon- is that tarragon in english?) so I used it and it was super!) nutmeg ( I figured any recipe with nutmeg had to be special) and I put in a teaspoon of Dijon because I like it a bit jazzed up, and a half a cube chicken broth. Didnāt have this so I added beef. Stir, Then add 1 cup of cream, 100 g of cream cheese and mix well until melted. Then add cheddar maybe a cup and melt again while stirring. At the very end add some black pepper. Pour over the cauliflower onion bacon mix in the casserole and mix and top with a bit of cheddar and bake in the oven.
The sauce was so good I was licking my fingers. I could have eaten it with a spoon. I especially didnāt write measurements because I did it to taste too. I think we can all do that for ourselves, tasting along the way. Oh! I canāt wait until it is done⦠LUNCHTIME!!! ( I usually eat 2 meals a day.)

Way to go! I have 53lbs in 6 months. My ketones stay around 0.5 but my waist has not been this small for, well, 35 years! I love the Ketogenic way of living!

Iāve lost 45-47kg (depending on how full my stomach is) in just over a year (it actually took 9-10 months to lose 45kg) and I was at an annual event last week where I hadnāt seen a lot of the people since the previous year. One person commented on how healthy I looked and then, worried, asked my OH later if I had had cancer or something. Someone else did the same asking me the next day. And as usual when I hadnāt seen people for while, lots of them just commented to me or quietly to my other half. When asked I tell them Iāve cut out unhealthy food like fruit and veggies and eat lots of meat, cream and cheese.
