Me too Naomi! I go through a lot and there’s so much crap in it. Just follow the advice on the recipe exactly and you can’t fail with this one. (I went out and bought the lite flavored olive oil-a first for me…but I never liked homemade mayo with regular olive oil!) I particularly love that you make it in its own storage container.

Oh I have tried so many times to make mayo and I eat what I make, but I have yet to make one that is really yummy. The taste of the oil is just way to overpowering… and I have tried all sorts of oils, mild olive oil, avocado oil, walnut and macademia oil, as well as ghee (which tastes good, but it turns hard in the fridge).

I am not sure what I am doing wrong, perhaps I don’t add enough oil? Or salt? Or lemon?

Anybody else disappointed with homemade mayo? I so desperately want to love it, because I love mayo, but I can’t seem to find the right ingredients…

I’ve used this recipe since I did a Whole30 a few years ago & have tweaked it a few times…

I find a “cup” is too much, I usually do about 200ml instead, maybe one egg, maybe one egg & an extra yolk depending on how big the egg is…
I like mine quite tangy so use ACV sometimes, more than suggested usually…
Add a bit of Dijon mustard sometimes, sometimes garlic or capers etc etc

Definitely need LIGHT tasting oil though, no tweaking there!

Are you used to Mayo that has sugar in it? Perhaps the tiniest bit of stevia might help & then wean yourself off the sweetness each time you make it - also try different flavourings… I’m going to make a Chipotle version next :wink:

Here is my recipe :
2 cups light tasting olive oil or avocado oil
2 T white vinegar
1 tsp sea salt
1 tsp garlic powder
1 tsp dijon mustard
2 whole eggs

I just use my immersion blender to make. I go through this about once a week!

Could very well be, I hadn’t thought of that. I normally don’t eat bought mayo (even though I love it), because of the vegetable/canola oil.
I will have to try adding a little sweetness perhaps next time. Thank you.

When I started doing paleo over a year ago, I saw Mel Joulwan’s “Well-fed” homemade mayo recipe. I haven’t gone back to store-bought mayo since. It takes so little time to make, the flavor is so much better, & I can customize it however I want. Immersion blender is the best way to go; I’ve done it in my Vitamix & food processor, but stick blender is much faster & easier to clean.

Recipe: 1 whole egg 2 T. Lemon juice. 1/2 t. Dry mustard powder. 1/2 t. Salt (I use Real salt).
1 1/4 c. Oil (I use light olive oil &/or avocado oil).

(One of my recent go-to snacks lately is celery with mayo…simple but yummy)

screen shoted it…thank you. I did another recipe, fist time was good, second time not…was probably the “walmart olive oil”? lol. Definitely will give this a go.
