Thinking of making my own mayonnaise…
How long before it spoils ?
Mine has lasted more than 2 wks… After that, I tend to toss any leftovers because everywhere I have read, says nothing longer than a week. I don’t understand why that might be. Egg yolk, fat and acid all last longer than that so…???
Also, if you have sous vide apparatus you can use that to pasteurize your eggs (hold at 135 for 2 hours). Just saying.
