A couple of quick questions;
Can I use a bit of store bought cider to kickstart a home made batch?
Can I use none ripened apples (I’m thinning out the trees this week) and what additional sugar should I use??

While apple cider should ferment nicely on its own, there is no harm in adding a bit of store-bought cider vinegar to help it along. If you have the type that still contains the mother at the bottom of the bottle, try to get some of the mother to put in your hoped-for vinegar.

As for whether you can use juice from unripe apples, I don’t know for sure, but I suspect it will probably not work quite so well, since the fermenting organism (a type of yeast, I believe) feeds off the sugar content. Ripe apples contain far more sugar.
