Sorry for the cheesy title…I know…it’s goofy.
Here’s an elegant and simple dish featuring eggs and smoked salmon.
First, start out with some fat in a frying pan. Here I used beef tallow (but you can use butter, lard, etc, whatever)
While the fat is heating in the pan, I crack an egg
And separate the yolk
I add about 2 tablespoons of cream cheese, and some chopped green onion, and some cracked pepper & salt. But, you can use whatever herbs or spices you want - fresh dill, pesto, parsley, jalopeno, etc…go crazy!!
I blend the ingredients with a fork
When the mixture is ready, the fat in the pan is ready, too
I add the egg white mixture, and let it set a bit
I then add the yolk on top. With a spoon, I scoop up the hot grease and trickle it around the yolk to cook the “glassy” raw whites and help fuse the yolk to the base
While the egg is cooking, I layer smoked salmon on a plate
I place the cooked egg on the bed of salmon
And then tuck in…
