Gimme the fat - aka new & improved beef stew

(Ellen) #1

Who knew fat made things tasty?!?!? In my previous life I always got the leanest possible beef then cut off any fat that was still there, added a whole load of veggies (it was more a veg stew with a bit of beef in it) then when it cooled would strain off any fat still on top.
This time however, I got a kg of beef with fat on, browned it off in the beef dripping saved from the last roast I did and poured it all in the slow cooker, with just a bit of veg (1/2 pumpkin, 8 shallots & 2 leeks) and it was pretty darned good! It made 8 portions and after defrosting some for dinner last night I was happy to see big chunks of fat dotted about, re-heated wonderfully. And as an added bonus, beef stew is the socially acceptable way of drinking a bowl of gravy :grinning:
