I used to love cooking, but I felt that cooking, cleanup, grocery shopping, etc., were taking up too much of my time, so I’ve simplified.
I got rid of most of my cooking utensils and don’t use a stove any more–just a microwave. My usual meals include the following:

Ground beef, crumbled in the bowl, and microwaved at med-low power. Wow, tastes like beef! But you can fancy it up with mayonnaise or spices if you want. I don’t bother with sauces most days–too much trouble and mess.

Canned salmon with mayo. Forget about all the chopped onions, celery, etc.

Microwaved scrambled eggs. You can add other things if you like, such as salmon, cheese, salsa. Adding a bit of mayo to the mix (before cooking) really helps; I consider it the secret ingredient for egg dishes.

Rotisserie chicken from the supermarket. If you’re lucky, your store will have cooked chicken legs.

2.5 ounces of real (not processed) cheese has the same protein as 4 ounces of meat. Fancy cheeses (e.g., Gouda, Swiss, or extra old) if you like. But be aware that most mozzarella is low-fat.

Italian sausage or other tasty sausage. Cook up a bunch and eat the leftovers cold. Be sure to check the nutrition info; some sausages are 0 carbs, some have 6 or 7.
If you still use a frying pan, oven, or slow cooker, just simplify the way you cook. Throw a steak or chop in the pan, turn it over, done. Or, oven cook or slow cook a roast until done. No need for fancy sauces or other treatments. A lady at the market has the best pulled pork; she says she stopped using spices and all the rest, and now cooks it with onion only.

PS. Since you’re already “bored,” you might as well make it easy on yourself. Instead of cooked sauces, use a few favorite condiments–mustard, mayonnaise, salsa, whatever. I’m lucky, I like the taste of food and don’t need a lot of extra flavors. For me, shirataki noodles, ground beef, and canned tomato sauce (no filler or added junk) is a fancy meal.
