I’ve never had them get grey using 2 minutes in the microwave. At 2 minutes (@ 80% power), the yolks are still a bit soft. Can’t go less or the whites are still runny. At 2:15 or so, the yolks are hard (but not grey).
I always used to steam them, but they were often still a pain to peel.
I think it has to do with both the genetics of the chicken and the age of the eggs. It’s that membrane under the shell that determines whether they will be easy to peel or not.
I meal prep on Sundays, but for grab and goes:
~ flavored macademia nuts (I’ve made a sour cream and onion powder that was yummy)
~ cheese rolled in salami (found pre-rolled in deli section)
~ raw sliced red pepper or other veggies
~ baby bel cheese
~ olives
Virginia, do you use a steam basket that is usually used for vegetables? Do you wait until the steam starts before adding the eggs? Thank you
