Fresh field tomatoes are plentiful here in Florida at the markets. I ran into some nice green tomatoes and always wanted to ketofy fried green tomatoes.
It’s so simple and fast.
Green tomato slices about 1/2" thick
Dip into egg white wash
Mix 50/50 Parmesan & crushed pork rinds
Season with your favorite herb and spices ( I used onion flakes and garlic salt)
Sprinkle or pat the dry mixture onto the egg washed tomato
Fry in your favorite fat until golden brown flipping once. ( I really like high smoke point refined coconut oil as it doesn’t taste like coconut)
