Fool proof coconut flour bread

I have always failed at bread baking but this one came out perfect. And for breakfast, I fried it in ghee and made guacamole sandwich out of it.

Looks good. I tell you a tip I have found that works a treat with such recipes and that is adding just a splash of ACV. It helps kick off some air bubbles in the rising agents.

I wonder if that’d work for coconut flour pancakes? I’d been looking for a way to make the recipe we used this weekend a little fluffier. I may give that a shot. Thanks, @Daisy!

yeah you can also add a bit of bicarb (probably cut the baking powder element a bit) and then basically a vinegar so lemon juice also works. It starts reacting immediately so add just before you put in pan.

Love this recipe. Thanks for posting. When I made it the psyllium husk quickly became a solid glue when water was added and then didn’t incorporate well into the mixture when added to it. The bread turned out okay but the psyllium can be seen separated in the crumb. Any suggestions for greater success next time would be appreciated.

Sorry I can’t help with that. I’m not very good at baking myself. I was just lucky this time it all went as planned.

I ended up running to bed bath and beyond and picking up bread pans. :slight_smile: The bread turned out great!!

I make a similar bread using coconut flour. Because they are so similar, I would think there is no reason that dividing the dough into rounds and cooking on a baking sheet would not work just fine. I am going to try this recipe.
Looks like it might be more like ‘whole grain’ type bread.

PS When I made this, I used to smaller bread pans and filled them each about halfway. It made two small loaves (one of which I wrapped with cellophane and threw in the freezer. It came out to 300ish grams per loaf after it was baked, I cut it into 15 thinnish slices. For each 20g slice, the macros are as follows:

66 cals
5.1g Fat
3.2g Carbs
2.2g Fiber
1.8g Protein

Do yourself a favor - make some herb butter. Toast the bread and throw some of the herbed butter on it. You’re welcome.

Oh…I bet cinnamon/nutmeg butter would be great too. Or even just coconut oil.
