Fish, pork, and other proteins

Can someone give me a recipe for salmon that . . . doesn’t make it taste so fishy?

The fish foods I tend to prefer are the very low fat ones (tuna, perch), and they have lots of protein but not so much of the fat that makes salmon a preferred seafood on Keto.

Is there a recipe for keto-friendly tartar sauce (or whatever sauce that is that you use to dress up fish).

I am trying to move beyond eggs and beef and bacon as my protein sources.

I tried making pork chops the other night and . . . didn’t like the taste.

What about pesto sauce on top of the salmon. You can even buy some good ones premade.

I add mayo to my tuna as a fat source. I use the brand chosen foods avaocado oil mayo.

I usually add salt pepper and sage to my pork chops and fry in butter. My sister hates her husband’s pork but loves mine. It may be the way it was cooked.

Ginger, soy sauce, wasabi/horseradish. Lemon butter. Spicy mayo.

Make sure the fish is fresh. Fresh is better than frozen, which is better than canned. Make sure it is wild caught and not farmed. Don’t let it sit in your fridge for long. Cook it within 24 hours of buying it so it stays fresh. You can doctor it up but I prefer mine grilled/sautéed in butter or avocado oil, with a squeeze of lemon or lime juice. Can use salt & pepper to taste.
I’ve lived here on the West Coast almost all of my life so am used to ocean fish, which is “fishier” than freshwater fish. Ocean fish tend to be fattier and have more flavor (IMO) than freshwater fish. My mom grew up in Michigan and was used to freshwater fish. It took her quite a while to get used to ocean fish.
And I’ve got fresh fish on the menu for dinner tonight! :smiley:

If you like smoked foods, smoked salmon & scrambled egg is lovely. I also use it in a sauce with double/ HW cream, & you can add parmesan as well, I have it over courgetti.

Otherwise we have grilled salmon, marinated in soy sauce first, with stir fry veg.

I’m not wild about salmon so have devised ways of disguising the flavour somewhat. Salmon cakes made with pesto & spinach (tastes oddly like chicken!), fishlafel (salmon cakes with tahini/parsley/cumin/garlic & coriander) & my favourites are just made with green Thai curry paste & chopped kimchi. I’ve seen recipes scattered about the interwebs for salmon ‘pate’ - from memory I think it was just mixed with cream cheese & onion. I use canned wild salmon & just smoosh the bones up for added goodness.

Now if anyone had a suggestion for making sardines even remotely palatable :face_vomiting:

SALMON RILLETTES … chop up a red onion, sweat in butter add a bit of white wine let it reduce a bit add salmon fillet, add a 1/2 cup of water and poach until cooked through… let the salmon cool and reduce the liquid and let it cool

beat 2 tbsps of soft butter until creamy add a bit of cream cheese, chopped chives, a squeeze of fresh lime juice, a good tbsp. of quality olive oil, a pinch of smokey paprika, some chopped up smoked salmon, the onion, a bit of dijon mustard to taste and the cooled salmon flaked by hand…

salt and pepper to taste… et voilà!!!

delicious with a big green salad :yum:

suggestions for sardines…

try them in devilled eggs… you can smash them after draining and add lots of lemon, sour cream, the cooked yolks, capers, onions, chopped parsley, fresh olive oil and a bit of mayo… then fill the whites up…

you can also eat them basque style… just slice an onion and caramelise with olive oil in a pan… when they start to turn a little brown and caramelised (and delicious) add sliced bell peppers, some chopped garlic, some chili pepper and a chopped tomato… add a splash of white wine and cook until tender… salt and pepper to taste… warm the drained sardines in the sauce and add lots of fresh chopped parsley

This is one of my faves even before keto. You can substitute the salmon for the tilapia

Pesto sauce? Is that made from pine nuts? I’ll have to see what we have at the local grocery . . . we do have a Whole Foods, but it is quite a distance from my home. Thanks!

I’ll try that! The local grocery store has “fresh caught salmon” on sale for $9.99 / lb., which is cheaper than other prices I’ve seen. I’ll splurge and see whether I can “love” it . . . Because I live alone and thus cook only for myself, I hesitate to buy too much.

Zeranity, no I haven’t tried these. Is there a brand name? Where do you find them?

The Italians use pine nuts, but I had to substitute walnuts once and found that I much prefer the flavor. Pine-nut pesto is too bland anymore.

@L1bby54, you can buy enough for 2 meals and cook it at once and then have 1/2 the next day for lunch or dinner. Make salmon salad out of it, or reheat w/ some veggies.

You could also use walnuts in the pesto.
I make a batch and freeze them in ice cube trays.
