Fast and awesome bullet proof-ish iced coffee!

This isn’t exactly a recipe, more just a method, but it’s so good I figured I’d share. I’ve always been a big fan of iced coffee, but not so much hot coffee, and buttered iced coffee isn’t really a workable thing. This is what I sip on all morning instead, then have my first actual meal between 1 and 2 pm. Keeps me full and happy all morning long.

First, make up a batch of iced coffee to keep in the fridge. I do a weekly batch of cold brew, which tastes about a million times more delicious than any other method imo (I weigh out 8 oz coarsely ground good quality coffee, put it into a nut milk bag–a few layers of cheesecloth tied up tight would work too–put it into a gallon jug, fill with cold filtered water, and let it steep for about 12-16 hours. Then take out the “tea bag”, and voila–enough smooth, mellow, flavorful cold brew to last me at least a week).

Then, in the morning, I take my big 30 oz stainless steel travel tumbler (you can find these everywhere now–Walmart, Amazon, etc–for like $10-$20, and they really do keep drinks cold for hours), and pour in in maybe 8 oz of cold brew and 2 TB of MCT oil. If you’re not accustomed to consuming MCT, then definitely start with WAY less than this–probably no more than 1-2 teaspoons–and gradually increase the amount over a week or two. 2 TB right off the bat will give you a stomach ache. I use my invaluable hand-held immersion blender to emulsify the oil and coffee right in the tumbler, but emulsifying it in a standard blender would probably work too.

Then I add in 1-2 TB of heavy whipping cream (if you add it in before emulsifying, you are likely to get clumps of something halfway between whipped cream and butter floating in your coffee, so I don’t recommend it unless that appeals to you), sweeten to taste with toffee flavored liquid stevia (or sweetener of your choice, or none at all), add a few ice cubes, and then pour in more coffee until my tumbler is full. Pop in a metal or glass (or, in a pinch, plastic) straw, and you’re good to go!

Seriously, this is SO satiating and delicious and energizing, plus it takes me all of 2 minutes to throw it together in the morning before work.
