Extended Stay

I will be living in an extended stay hotel for about the next three months. I am used to hotels (check out my page Traveling Ketonian) however I normally only stay for upwards of a week. I am going to make a bunch of meals and freeze them. What are your favorite ketogenic freezer foods? I am also going to make jerky from some Venison.

Look up “Pemmican”, @richard and I were just discussing it Pemmican . It is fatty and calorie dense, needs no refrigeration.

You can precook sausages, bacon, burgers etc and freeze them so they just need the micro.

I’ll check out your page as I’m a frequent traveler too.
We are camping for three days. At the last minute I grabbed some Swedish meatballs from the freezer. I’d made them for Christmas Eve dinner.
They were so good warmed up last night with a cucumber salad! I cut them up once defrosted and fried them in butter.
I’m terrible at recipes as I don’t usually measure.
I use any combo of ground beef, pork, lamb and veal. Spices are:
dill, cardamom, and caraway seed.
About 1tsp each per pound and salt/pepper to taste.
Eggs 1 per pound, hwc about 1/2 cup per pound
I roll and bake them half way then simmer in broth.
Add more spices and hwc to broth as desired.

Thanks for the suggestions. I spent all day cooking yesterday.

2 lbs of beef heart jerky
2 lbs of Venison jerky
A bunch of venison Keto chili
Keto (pork rinds) Meatloaf made of 2.5# beef heart, 1 package of beef liver and 2 lbs of Venison.
I have beef broth in the pressure cooker right now and my wife is making a chicken and spinach dinner that is amazing that I will be portioning out and freezing.
Canned mackerel, oysters, and sardines.
Brussel sprouts

Fat bombs. I can’t keep down Bulletproof Coffee but I love me some fat bombs with my morning java. I Frankensteined several coconut ones I found online into a smoother, less Almond-Joy-in-your-face flavor. When you got hunger but no time, these are magic beans.

Coconut Keto Bombs

1 C. coconut butter
1 C. cocoa butter
2 C. coconut oil
1 t. almond or vanilla extract (optional)
sweetener of your choice (optional)

Basically, you just melt the butters and oils very slowly over low heat until everything’s clear and you can stir it together. Remove from heat, let cool ten minutes, add your flavorings. Drop by the tablespoon into plastic ice cube trays (I use one of those non-stick mini muffin baking trays because each muffin cup is exactly one tablespoon) and refrigerate for a few hours. Pop them out and store in the fridge or freezer in an airtight bag or container. Some people add a handful of shredded coconut or finely chopped almonds because sometimes you feel like a nut, sometimes you don’t. I found all my ingredients on Amazon and at Trader Joes.
