Easy Peasy Chocolate Pudding

Hello all, I come bearing gifts!
Kevin Mountain offered me a trade… his pre-keto lab results for a chocolate pudding recipe. I had a vague recollection of a vanilla pudding recipe so I quickly whipped up a chocolate version for him and had mom taste test to make sure it was up to par.

So here you go!
This takes 20-30 minutes from start to finish, and it’s easy!

Basically it was based off of an egg custard recipe my bf’s mom showed me how to make.

1 1/2 cup cream
3 egg yolks
1/2 tsp vanilla extract
1/2 tsp almond extract
a pinch salt
1/3 cup cocoa powder
1/4 tsp xantham gum
1/6 cup sweetener (granulated is fine, I used monk fruit and erythritol)

I always see recipes suggest almond milk too but it just dilutes the fat content and who needs that?

Pour in the heavy cream into a pot or saucepan or double boiler
heat on medium until its just simmering - not boiling
turn down to med-low
whisk together cocoa powder, sweetener, salt, and xantham gum until combined then slowly whisk into warm cream a bit at a time whisking until no lumps like youre making stovetop hot cocoa
add the vanilla and almond extract
Whisk yolks and then drizzle in keep careful watch and stir constantly or they will curdle. Double boiling helps prevent this. Stir until thickened. Put in fridge until completely cooled (or eat it warm!)!

You could also “temper” the yolks to prevent curdling: whisk them up in a separate bowl. Add the heated chocolate/cream mixture to the yolks in the side bowl a bit at a time, maybe up to about 1/2 cup; then add all that back into the main pan. Julia Child will be proud! :wink:

We used powdered Swerve and had to double the amount to 1/3 cup.

This looks yummy! I’m having a desert craving lately, but I’ve yet to find my perfect choice. I can’t wait to give this a try!
