Easy Homemade Mayo

So I thought well why not make it at 1.20 am - nothing better to do right? Well… it really IS that easy and it really DOES taste that good. Thanks @HMMcLane, this is a WINNER of a recipe. I thought for one hideous moment that it was going to be an epic fail because my old broke but nope, worked just fine. I added salt, pepper and some dijon mustard. I used a mix of soya, pistachio and walnut oil.

Yeah I just though fuck it why not! Keep meaning to make it so just do it!
Made it, put in jar, washed up - less than 5 minutes.

Yes. It is definitely hard to find a light tasting oil that is keto friendly and not crazy expensive.

I have avocado oil. I so rarely eat mayonnaise that it would become a very expensive jar. So, I might have to do a “salad” week. Egg salad, tuna salad, chicken salad…to justify it.

Do you have access to a Costco? 1L < $10!

Yeah we make mayo using CostCo avocado oil. It makes a very thick, Mayo with a faint almost imperceptible greenish hue. The taste however is awesome.

Thanks so much @Daisy for posting for me. I don’t know why I was having so much trouble. The trick is a light tasting oil :slight_smile: mix flavours to your liking. I love garlic and dill. Use this recipe for dips and salad dressings as well as mayo :slight_smile: hope y’all enjoy

I’m going to experiment with bacon/duck fat next.

I love dill too, especially with salmon. Hmmmm adds to shopping list!

So I made the most amazingly thick and lush mayo with avocado oil. My Costco isn’t carrying it anymore. I hate it. It tastes sweet to me. So, I’m going to try light tasting olive next. I also ordered walnut oil. I’m determined to have egg salad I like.

Combo the oils. I find a lot is in the seasonings and the acid used too.

I suspect I’ll want to try that too. I used lemon juice but I think I’d like ACV better. I grew up on Kraft “real” mayo and that’s the flavor I really want.

Lol. I know what you mean. Heather doesn’t like lemon juice either. I guess it would work if you specifically wanted a lemon flavour for fish or something? Or liked lemon!

That would be true. I also tried lime juice and that was a very interesting flavor but def not useful in most dishes. I’m going to make another attempt today. For whatever reason, I’m feeling motivated to get a recipe I really like.

Also, help me with my thought process here, I want to figure out a generic, creamy base I could change up with seasonings and a few additives (blue cheese, feta cheese) that would make for easy, small portions of salad dressing.

Does that make sense?

For example some sort of base of sour cream and maybe mayo to which I could add the flavor du jour and end up with fast, easy dressing. Then I could just keep a container of the dressing base in the fridge and customize my palette each day.

What are your thoughts?

Yes, I used to make a dip which was half mayo, half yoghurt/sour cream/creme fraiche with herbs and garlic mixed in. I think mayo on it’s own can be a bit cloying. Anything you always like in it you may as well put in at the start like seasoning, maybe mustard, garlic, whatever. Then chuck in your flavour du jour. I think it is a good plan. You can work on getting the base just so and then give us the recipe!

I just added some sour cream and blue cheese crumbles to my mayo and it was the best salad dressing I’ve had in a LONG time. Thx for the inspiration.
