Easy Coconut Pumpkin Goodness

Equal parts coconut milk and puréed pumpkin
Stevia to taste
Salt to taste/enhance sweetness
Mix ingredients and chill.

I used:
1 can (13.5 ounce/400 mL) Whole Foods coconut milk
1 can Libby’s pumpkin purée
Vanilla flavored liquid stevia
About 1 teaspoon sea salt

The consistency after chilling is like a thick cream.

Add other flavorings and spices as desired.

Ooooh…may have to try this tonight, have a can of pumpkin and one of coconut milk in the pantry wasn’t sure what to so with – sounds like a perfect solution!

That sounds so good! I can’t wait to try it. I found a recipe on Pinterest for a pumpkin spice mousse.
1 15oz can of pumpkin
2 8oz packs of cream cheese
2 cups of heavy cream
Pumpkin pie spice
Tbs vanilla
1/2 cup of sweetener of choice (I use stevia)
I also put a few dashes of cinnamon in mine.
Blend it all together with an electric mixer.

I my goodness y’all it is pumpkin heaven in your mouth.

I thought I would add that I just used a spoon to mix this. The Whole Foods brand of coconut milk contains guar gum which is why I could use a spoon.

If I used a brand without it, I would probably use a stick blender to mix it.

I’d add 2 T. chia seed or hemp seeds to make it more pudding like. Great base recipe thanks for the share.

I actually made that for a Pumpkin Fest at work. Even the non-keto people ate it up.
