What do you think - can I sub erythritol & maybe some stevia for the sugar? And until I get my hands on some duck fat, maybe bacon juice for the duck fat? Any advice?

I agree with avoiding wheat. The good news is there is wheat-free tamari, which is similar to soy sauce. The brand is San-J. It would probably work just as well as soy sauce in the recipe because of the high salt content.
