Does anyone have a recipe for keto broccoli cornbread?
My wife likes broccoli cornbread. It’s moist and tender and goes really good with several different kinds of meals. But I sure wish we had a keto friendly recipe.

Thanks, Carol! That might be about as close as I’ll get. I’ll have to do some experimenting, probably, and maybe some close examination of a couple of different recipes to try to come up with something good.
I did get some of the ultra expensive sweet corn extract a few weeks ago so a drop or two of that (doesn’t take much at all!) might add quite a lot of corn flavor.
Will have to update the thread if I do get something worked out. It might be a while…
This is the best keto baked good I’ve had, and I’ve tried lots. This could definitely pass as cornbread I think.

Hmmm… that is really interesting, Rian! I’ve never thought about using macadamia nuts in bread. But when I think about it, it sounds like it might just work!

Depending on your taste preference, you may or may not want to add some stevia to the broccoli cornbread recipe above, since cornbread sometimes has sweet nuances.
I made fat bread recipe below before and it was more like loaf bread, as opposed to “corn bready”. And macadamia nut butter cost a fair amount…I tried to make my own…once…lol.
It looks really good! But wow, it’s expensive. A cup of macadamia nut butter, a cup of coconut butter and nearly a half dozen eggs. That’s like a $10 loaf of bread, if I’m lucky, maybe $15 loaf of bread if I’m not so lucky. Wow. But it really does look delicious.
The recipe @replay posted is the same is the one I posted. It’s a cup of whole macadamias made into butter. That’s maybe $3-$4 worth of macadamias. You can make a cup of coconut butter easily by putting a few cups of shredded coconut into a food processor for about ten minutes. It’s still not a cheap recipe to make per se but it’s really good. I just came off a 4 day fast today and it’s the first thing I made.
Good tip on the coconut butter. Seems obvious when you think about how other nut butters are made, but I wouldn’t have thought of it.
Rian, you must have a good place to buy macadamia nuts. The best price I can get around here is 12 oz for about $10. Glad to know of a good source if you have one.
Coconut is a little better but not as much as I’d like.
Living out in the stix can be good but it has its challenges.
Cool beans . I plan of giving this a try. I have some Trader Joe’s fresh coconut meat in the freezer for trying to make homemade coconut milk or butter.
Costco. But if you live out a ways that might limit your prospects. Since you are making butter with them in this case you could always opt for the cheapie bits and pieces macadamias you see in bulk bins at grocery stores if that’s an option? I’m also intrigued by the idea of trying this with different types of nuts, I can’t see why it wouldn’t work with almonds or walnuts but I guess a proper trial is needed first.
I’ll be honest, it was a tad grainy compared to the stuff in the jar but still really good. Next time I’m going to process it a little longer, maybe 15 minutes as opposed to 10. Straining through a cheesecloth could be an option too I guess but perhaps a hassle also?
And I wonder if the coconut being frozen will make it seem more brittle and easier to process? I noticed the more hot and gooey it got the less it seemed to smooth out, frozen pieces could help with that but again, this could take some experimenting.
