Does anyone have a recipe for Banana Muffins that don't have bananas in them?

I’ve been looking. But I just haven’t found a recipe for banana muffins that don’t have bananas in them.

I miss the banana muffins I used to make. They were soooooooo good. But this was before keto. And I used real bananas. They were light and fluffy and moist, I could have sold them, I think, they were that good.

I don’t buy bananas anymore so I don’t even one of them sitting around the house. They have a good bit of sugar / carbs in them naturally. One medium banana has about 24g of carbs, net, and about 14g of sugar. (Yes, I know it gets divided into several muffins. Most recipes I’ve seen call for 2 bananas for 12 muffins.) So I’m reluctant to add them back into the diet. They may be borderline doable on keto. It would be a stretch. But I know I have banana extract sitting in my cupboard right now, I can’t recall if it’s ever even been opened, but I know it’s there.

I’d love to have a good banana muffin recipe that I don’t have to feel guilty about enjoying. Is there such a thing? If you know of a keto friendly one, I’d sure love to have it.

Start experimenting! I bet you could make something amazing with a basic Keto muffin recipe and banana extract. Or maybe see if you can find a sugar free banana pudding mix and mix it into the muffin batter. Maybe I’ll try making too, sounds tasty

Here’s a recipe I found. Haven’t tried it myself. I might try to find a substitute for the golden flax meal, I don’t generally like recipes with flax in them. But here it is…

Thanks for the input! I may have to adapt one yet. Just thought maybe someone else already did.

I like the idea of the banana pudding, hadn’t thought of that.

Here’s why I wouldn’t bother, aside from the desire to develop novel eating habits rather than sustaining the ones that made me need ketogenic dieting in the first place.

Fake banana flavor… or Gros Michel vs Cavendish clones.

The short of it is, pretty much all artificial banana flavors, or flavor extracts, are limited versions, focusing on one flavor chemical, among 42 in an actual Cavendish clone banana, that you’ve been using all these years.

You will not be able to replicate the full flavor of a banana without a banana. It’s one of the dumbest versions of artificial flavor out there.

I would never use artificial flavoring or sugar-free products. They are loaded with chemicals that can harm the body. We want to be healthier. I don’t know if there is a good recipe for keto banana muffins, but I just had to remind everyone to be very careful that you avoid all artificial food products. Do your best to eat whole natural foods, it takes less prep time and your body will appreciate it. Remember to KCKO!

I don’t know, maybe I’ll have to use a little real banana to get the flavors I’m after. Maybe minimize the actual amount but try my best to enhance those flavor to the max.

It’s pushing a year since I’ve had a banana and the tiny bottle of extract has not even been opened. This isn’t something I want every day. I’m thinking more like I do ice cream… I’ve had a keto version about 3 times in the last year and a tiny bit of the real thing twice. Maybe that’s blasphemy to some of you. To me, that’s enjoying life.

On the other hand, banana flavoring tastes a lot more like what bananas tasted like until the 1960’s. I’m olde enough to remember when the Gros Michel stopped being commercially viable and Chiquita introduced the Cavendish.

On a trip to southeast Asia years ago, I was startled to learn how many varieties of banana there are, and how lovely so many of them taste. Unfortunately, the Gros Michel, now nearly extinct, was the only variety really robust enough to ship without worry. The Cavendish can be shipped, obviously, but it’s a lot more finicky, and it was the only variety banana producers were able to discover that could even be shipped at all.

Yeah, the only problem with the fake banana chemical is that Cavendish are generally more subtly flavored, and that Gros Michel flavor tastes very artificial to anyone who was raised on Cavendish. Since the OP was making banana baked products until recently, I’d guess Gros Michel flavor won’t work so well.
